The Danche washing station services approximately 800 local producers at 2200~ meters above sea level.
The area is renowned for its amazing cherry, and the Danche Station puts a strong focus on high-quality processing. This particular lot is floated upon arrival, sorting the cherries and picking out any duds. It is then stored in tanks to dry-ferment for 3 days before being put out as whole cherries on raised beds to dry for 16-21 days.
It’s a treat for all the classic Ethiopian lovers out there, enjoyable as a pour-over, Aeropress, or as a bright espresso(super fun in milk, think cereal milk!).
